Our Bella Novello is a Napa cult-cab at a non-cult price, dense and opulent, waves of intense black cherry and blackberry fruit, cocoa spice and silky tannins.

Growing Conditions

The grapes are sourced from both our estate vineyards on Orchard Avenue in the Oak Knoll District Appellation of Napa Valley and on Silverado Trail in Calistoga, Napa Valley. Both are prime Cabernet Sauvignon growing appellations. Novello is Gianni Paoletti's mother's maiden name. This is our best selling Cabernet 100% Estate, 100% Calistoga. Highly recommended by Connoisseur Guide. Napa Cabernet of very high quality & finesse yet; at a recession proof price. The vines are 20 years old. The 2012 vintage is one of the best in recent history. Ideal weather during the growing season and then right at the end of September a cool period which allowed for intense flavor development without sugar accumulation producing balanced and ripe fruit of extraordinary color and flavor. Select barrel lots were carefully chosen to create the Bella Novello.

Bottled May, 2014.

The grapes were hand-picked, in small lots, at the peak of ripeness, destemmed, cold soaked, fermented to dryness and gently pressed.

The wine was then aged 18 months in a combination of 40% new French and 60% neutral oak barrels.

Food Pairing

It is amazingly synergistic to prepare the sauce from the wine you serve with the dish. Try these recipes with our 2012 Bella Novello: pasta with Marinara cabernet sauce, filet mignon with cabernet sauce or poached chicken breasts with blackberry cabernet sauce.
