Nose

The 2015 Sauvignon Blanc presents heady notes of citrus blossoms along with lighter expressions of kiwi fruit and white peach.

Palate

There is a beautiful mineral expression of wet river stones in the 2015 vintage complimented by subtle notes of sweet spice. The mouth feels is smooth and focused on the entry and maintains a light to medium presence on the pallet.

Growing Conditions

Our Sauvignon Blanc was crafted in the most traditional style of winemaking.

Harvest

Hand harvested and gently whole cluster pressed, the juice was collected and moved directly to barrel.

Bottling

1.5L MAGNUM SIZE.

Winemaking

We have used neutral barrels, meaning no sensory influence from the oak, but the barrel provides us with the perfect vessel to allow each small lot to ferment with indigenous yeast and benefit from direct lees contact and battonage.

Aging

We also find the barrel to be perfect for proper aging of the Sauvignon Blanc, which is bottled after seven months.
