Nose

On the nose, aromas of cocoa, black cherry, maple, and nutmeg are expressed, giving way to the captivating flavors of Hawkster.

Palate

Full-bodied and robust like its vineyard blocks, the palate showcases sandalwood, cassis and black licorice while asserting rm and mature tannins throughout the finish. Keeping true to his name, Hawkster will remain elegant and continue to evolve for years to come.

Harvest

Similar to the near perfect weather conditions of 2012, this vintage was graced with a long, slow approach to harvest and plenty of time to deliberate on the ideal pick date for each block. Unlike 2012, the fruit for Hawkster was harvested over two days, October 10th and 11th.

Winemaking

Beginning with a five day cold soak, this wine utilized the slow moving AMH yeast that effectively carried the fermentation for two weeks in tank. Unlike the other Maggy Hawk wines, Hawkster was fermented in three separate lots. Punch-downs were performed one-to-three times daily to aide in the extraction of flavors and color profile desirable for Pinot Noir. Once fermentation was complete, the wine was racked into a blend and began its aging regime until bottling in the following winter.
