Nose
Blackberry, cassis and black cherry aromas.
Palate
Earthy notes of truffle, smoky cedar and dried herbs unfold around this wine’s assertive tannins that will soften with age. Rich, expansive and well-structured with a long, lingering finish.
Growing Conditions
In 2012, we primarily selected our grapes from four esteemed Sonoma County vineyards: Barrelli Creek Ranch, Timber Crest, Scherrer and Monte Rosso. Each of these sites added a unique layer of complexity to the final wine. The 2012 vintage was warmer than the previous few years, resulting in fully ripe, dark fruit flavors in our Cabernet. The fruit translated to finished wine with a terrific balance of acidity
and fruit flavor.

Winemaking
The grapes were harvested in the early morning to keep the fruit as cool as possible before being destemmed and sent directly to tank. The lots were cold soaked for two to three days until we warmed them up and began fermentation at temperatures ranging from 88°F to 90°F. The wine was pumped over up to three times per day. After daily lot tastings, we determined draining times, which left some Cabernet lots in
fermentors for extended maceration. Each lot was evaluated separately as it aged, blended together and placed back into the original barrels to marry together until bottling.
Aging
This wine was left unfined and aged in a combination of new and used French, American and Hungarian oak for 14 months.
Appearance
Dark purplish-red hue.
Food Pairing
An ideal complement to earthy dishes, wild game and red meats.
