Palate
Pure citrus fruit flavor is highlighted with a hint of sweet oak.
Winemaking
Grapes were hand-picked at the peak of ripeness. The whole clusters were gently pressed with the Champagne program. The juice was then chilled, settled, and racked. 50% of cuvee were fermented in stainless steel tanks while the rest went through the barrel fermentation. After completion of the secondary fermentation, the wine was aged sur lees.
Aging
12 months sur lees.
