Growing Conditions
The North Coast appellation provides cool coastal air and fog and consistently cooler temperatures for growing some of the best Cabernet Sauvignon grapes.
Winemaking
The ripened grapes were hand-picked. The grapes were de-stemmed with a portion of the whole berries left intact, fermented with inoculated yeasts, and pumped over daily. After completion of fermentation the wine received a short extended maceration and was gently pressed. Malolactic (secondary) fermentation followed pressing and the wine was then transferred to French and American oak barrels for aging. The wine was racked multiple times during aging. Our winemaker hand-selected the lots that went into this wine specifically for their quality and character. Aging in both French and American oak yielded a delicate balance of silky fruit and oak complexity.
