Nose

The nose is fruity and fresh. It is filled with citrus and delicate pear and floral notes.

Palate

Delicious and complex flavors that fill your mouth with layers of pear, apple, and white peach. Crisp, balanced, creamy mid-palate and a lingering finish.

Winemaking

The grapes were whole cluster pressed to avoid bitter compounds. The juice was then chilled, settled, and racked to encourage a clean fermentation. Proprietary yeast was used for the secondary fermentation.

Aging

The wine then spent a minimum of 12 months in tirage (on the yeast) for aging using the traditional method champenoise to create the tiny bubbles and complex flavors.
