Nose
Our Estate Chardonnay has bright aromas of apricot, golden apple, a hint of lime and elegant bouquet of vanilla and custard cream.
Palate
A layer of voluptuous tropical fruits and vibrant citrus flavors excites the palate while vibrant acidity holds a great structure. Sweet and toasty oak notes add depth to the mouthfeel and melt into a long finish.
Winemaking
All grapes were picked by hand at the peak of ripeness. The whole clusters were gently pressed using a Champagne program and the juice was racked into 100% new Burgundy oak barrels for fermentation. The yeast lees were hand stirred monthly to enhance the rich, creamy mouthfeel and to encourage secondary malo-lactic fermentation.
Aging
After completion of malo-lactic fermentation, the wine was aged sur lees (on the yeast) for 12 months.
