Palate

Floral and strawberry characters greet the nose on this beautiful blush wine. The mouth of this wine is delicate and crisp. The flavors echo the aromas adding a hint of peach leading into a bright and clean finish.


Growing Conditions

The growing season of 2016 got off to an early start. Mild weather through the summer allowed the grapes to ripen at a moderate rate developing deep and intense character. As a result of the early spring, harvest came in a full 2 ½ weeks earlier than average. Mild weather through the harvest brought the fruit in at a slow pace allowing us to pick each block at its optimal ripeness and get the fruit into the winery early in the day and cold. This provided us with excellent fruit quality to make a great Pinot Noir Rosé.

Winemaking

The grapes were carefully hand harvested into small picking bins so as not to crush them. The grapes were then lightly crushed and allowed to macerate at 45°F to extract a small amount of color before the grapes were pressed. The grapes were then 100% Stainless Steel fermented at 55°F to 60°F to retain freshness.

Food Pairing

Try this elegant pinot noir rosé with lighter fare, such as heirloom tomato and watermelon salad with fresh feta and mint, tabbouleh or even falafel. The vivid acid accompanies grilled fish tacos with peach salsa and avocado or chipotle rubbed barbequed chicken. Add Spanish Mahon with chorizo or fresh goat cheese with ancho chili jam to complete the cheese course.
