Nose

Creamy cherry, lemon and cola flavors combine with a lush palate, lively bubbles and a persistent finish.
Winemaking
Our Blanc de Noirs is predominantly made from hand-harvested Pinot Noir grapes, the hallmarks of which are a vibrant red fruit character. A portion of the Pinot Noir is left for 24 hours in contact with the grape skins, producing a light rosé color with enhanced Pinot Noir flavors of red berry, floral notes and light vanilla silkiness. Vin Gris is then added to this lightly Pinot Noir tinted blend to achieve the creamy palate and rosy hue dominant in this wine.
This wine was exquisitely crafted with hand-harvested grapes of PinotNoir and Chardonnay from our favorite Sonoma Vineyards. This viticultural diversity allows us to consistently produce cuvées with complexity and pure fruit expression. 100% wholecluster pressed used to add richness and structure. 5-7% cold-soaked Pinot Noir juice (Vin Gris) is blended into the base wine for color and to establish the creamy notes on its finish. Juice naturally settled overnight (debourbage) to encourage a clean fermentation. 100% fermented in stainless steel tanks at 55-60°F to retain vibrancy and freshness. Proprietary yeast used for the second fermentation provided a delicate house structure. Cuvee is a blend of 18 different base wines.
Aging
Wine spent a year and a half aging entirage (on the yeast) in our caves.
Food Pairing
Outstanding with crab, Thai cuisine, roasted pork, quail, foie gras or semi-sweet deserts. Seasoning affinities include star anise, plum sauce and tarragon. Look to triple aged Gouda or hard aged cheeses with persimmons and hazelnuts for the cheese course.
