Palate

Made in the saignée method and aged entirely in stainless steel, this wine displays resounding freshness and appealing acidity. Flavors of honeydew and fresh white strawberries are carried through with a long, mouthwatering finish.

Growing Conditions

The 2017 vintage began with significant rainfall prior to bloom, refilling the state’s reservoirs and ending California’s five-year drought. We saw a sudden spike in temperatures just prior to harvest, leading fruit to ripen quicker than anticipated. This sped up our harvest schedule, but due to our team’s vigilance, the fruit was still able to be picked at optimal ripeness. Temperatures then cooled back down by mid-September, allowing the remaining vineyards to complete ripening at an ideal pace. The rest of harvest was finished as planned, with yields coming in at their typical levels.

Winemaking

Staying true to Copain’s philosophy of producing wines that emulate a more classically French style of winemaking (lower alcohol, higher acid wines), vineyard were picked on the early side. This resulted in juice lower sugar levels, typically an average Brix of 20.7. The fruit is destemmed, sorted and dumped into open tops. The grapes comes in cold, and then warms naturally over three days before the fermentation process begins,
