Winemaking

Grapes from a single vineyard in Alexander Valley are gently pressed to stainless steel tanks for 48 hours of
cold settling. The juice is then transferred to new and older French oak barrels for fermentation. After
primary fermentation, the wine is sur lie aged for seven months with weekly stirring for three of those
months. This wine does not undergo malolactic fermentation in order to retain its bright flavors and crisp
acidity.

Food Pairing

This Sauvignon Blanc is a very food-friendly wine that pairs perfectly with white fish, shellfish, chicken, pork
or veal. Pair with seafood risotto, light pastas, vegetable quiches or a cheese platter with Chèvre, Feta, Burrata or Brie.
