Nose
Aromas of blackberry, ripe dark plums, cassis, black raspberry, cedar, mocha and vanilla.
Palate
Aromas carry over into the palate with additional flavors of dark chocolate, anise, clove and spice. Its balanced acidity and well-integrated tannins are plush on the palate and allow the flavors to linger in the finish.
Growing Conditions
Our 2012 Cabernet Sauvignon grapes were harvested from the Caton Vineyard located in the Moon Mountain appellation of Sonoma Valley.
Winemaking
Cold soaked for 3 days, fermented in small batches in open and closed top fermenters and barrel aged.
Aging
23 months in 91.5% French oak, 5.7% Hungarian oak, and 2.8% American oak.
Appearance
The wine has a dark ruby color.
