Palate

complemented by lush flavors of kiwi, passion fruit, lime zest and orange crème. Medium-bodied on the palate, bright fruit and crisp acidity lead into a lingering finish.

Winemaking

Throughout the growing season, our winemaker visited each vineyard block regularly to monitor and taste the fruit to determine the optimal time to pick. The grapes for our 2015 Sauvignon Blanc were harvested at the perfect time to capture the grapes’ natural acidity and tropical fruit qualities. Hand-picked during the cool, early morning hours to preserve the delicate flavors, the grapes were quickly delivered to the winery, where they were immediately loaded into a tank press for gentle pressing, separating the juice from the skins. After being transferred to chilled stainless steel tanks to settle overnight, the clean juice was then racked into a second tank where yeast was added to begin fermentation. After inoculation, the lots were separated and transferred into small stainless steel tanks, while less than five percent of the blend was sent to age in neutral French oak barrels for two months, softening the blend and allowing the creamy tropical notes to shine. Only the best lots were blended for the final cuvée.
