Nose
Dusty dark fruits, plums, blackberries, rosemary, black liquorice and cassis are accentuated in the aroma which Diamond Mountain cabernet is known.
Palate
Aging in majority new French oak barrels adds notes of toasted vanilla, cedar, caramel and baking spice. The full and mouth-filling tannins captures the deep flavor intensity and bold structure of the mountain-grown grapes that will allow for extended cellaring.
Growing Conditions
2012 marks the inaugural vintage for our Cabernet Sauvignon from Diamond Mountain.
Food Pairing
Dishes such as beef tenderloin with blackberry dressing, burger topped with aged gouda and crispy fried onion rings, ribeye steak and aged cheddars and peppery cheeses.
