The 2015 Naissance has aromas of melondew, lemon zest, yellow flowers, and green apple with a notes of minty/bay leaf finish.
Full yet crisp mouthfeel, intense minerality with a grassy, citrus end.
We pressed grapes for this wine at 50 percent whole cluster, and then settled the juice for two days before racking it into a combination of concrete, stainless steel and new and used French oak puncheons for fermentation. We aged the wine sur lie for five to six months, with batônnage (lees stirring) twice a week for the first two months and once a week for the last three weeks of aging. This fully integrated the lees for rich complexity.
